Cook Time - 45 Minutes
Serves - 4-6
Difficulty - Easy
Ingredients:
8 OZ unsalted butter room temperature
3/4 cups dark brown sugar (light brown is fine too)
3/4 cups sugar
2 eggs room temperature
1 tsp. Vanilla
1 cup finely ground almonds
1 and 1/4 cups all purpose white flour
1/2 tsp. Baking soda
3/4 tsp kosher salt
12 OZ bag of semisweet or bittersweet chocolate chips
Maldon salt
Directions —
Preheat oven to 375 if using convection, 350
Cover two cookie sheets with parchment paper
Using a hand mixer or stand mixer, cream the butter and sugar together until light and fluffy, add the eggs one at a time, scrap down the sides of the bowl. Add the vanilla and beat until creamy. Add the flour, ground almonds, baking soda and salt and mix only enough to incorporate. Don’t over mix. Fold in the chocolate chips. Using an ice cream scoop or spoon, drop the batter on your prepared pans. These cookies SPREAD so I only do about 10 per sheet. Bake for 12 to 14 minutes. Remove from cookie sheet and cool on racks. Sprinkle with Maldon salt
Variation: add the zest of one orange and use bittersweet chocolate.
